云品薈常務(wù)副總經(jīng)理曹雷認(rèn)為,相關(guān)生產(chǎn)企業(yè)需要牢牢地把握獨(dú)特性普適性兩個(gè)關(guān)鍵點(diǎn)。

所謂獨(dú)特性,就是菜品的靈魂,即風(fēng)味和品質(zhì)不能丟。在預(yù)制菜產(chǎn)品打造中,不僅要保留好云南風(fēng)味,還要發(fā)揮好云南優(yōu)質(zhì)食材的優(yōu)勢(shì)。

Uniqueness means the soul of dishes cannot be lost, that is, the flavor and quality should be fine. In preparing the Yunnan dishes, we need to keep local flavor, giving full play to the quality of Yunnan ingredients.

所謂普適性,就是要把握不同群體的飲食偏好,對(duì)產(chǎn)品進(jìn)行口味普適性的改良,讓云菜具備大眾消費(fèi)的可能性。

Universality is to grasp preferences of different diners, so that Yunnan dishes could be improved to maximize the volume of consumers.

"Using our organic ingredients, Yunnan cooking traditions and the trend of pre-cooked dishes, we can bring Yunnan green foods onto dinner tables home and abroad, while enriching local vegetable farmers,” Cao said. “This is a possible new way for Yunnan specialties to go global."
